Cocoa #4: Hot Cocoa Mug Cake

Good…well, midnight, everyone. I was a little lazy after my shift today, and I indulged in this cocoa treat and scrolled through Facebook instead of writing this post on time. I hope this weekend was a happy one for all of you, and for all of you shoppers I hope you found some great deals!

After all these drinks, I figured I’d mix it up a little bit. For today, our recipe is for a Hot Cocoa Mug Cake! A cake that looks and tastes just like hot cocoa!

Some ingredients you’ll need are:

  • 1 tbsp + 2 tsp Cocoa Powder
  • 3 tbsp Flour
  • 1/8 tsp Salt
  • 1 tbsp + 2 tsp Sugar
  • 1/4 tsp Baking Powder
  • 3 tsp Coconut (or Veggie) Oil
  • 3 tbsp Milk
  • 1/2 tsp Vanilla
  • Marshmallows for topping

Plop all those dry ingredients into a bowl and whisk them up: cocoa, flour, salt, sugar, and baking powder. You’ll be adding the liquid ingredients to them, so make sure there’s room for them. Next, stir the oil, milk, and vanilla together. If you’re using coconut oil, I found that heating it after adding the milk and vanilla to it is best. When I heated it before adding the milk, the milk cooled it off too much and turned it back into a solid! I had to take a step back and heat it up again.

Stir the liquid mixture into the dry really well, then pour carefully into your mug of choice.

Heat ‘er up for 45-50 seconds, checking after with a toothpick to make sure there isn’t any batter stuck to it. If the toothpick comes out clean, that means it’s cooked through and through!

Just drop some marshmallows on top to give it the appearance of cocoa to finish it off! As the marshmallows sit on top of the steamy cake, they melt just slightly to become one with the cake.

This cake is moist, fluffy, decadent, and scrumptiously sweet! I love the gooey marshmallows and super soft, chocolatey cake.

Let me know if you guys try this simple and delicious cocoa recipe, or if you have any other versions you’d like to share. ‘Til next time~

❤ Michelle
